๐Ÿง Oats & Dates Cupcake Recipe (Eggless)


Ingredients (makes 6-8 cupcakes):


Rolled oats – 1 cup (grind to flour)


Whole wheat flour – ¼ cup (optional for better texture)


Seedless dates – 12 to 15 (soaked in milk for 15 mins)


Milk – ½ cup (adjust as needed)


Baking powder – 1 tsp


Baking soda – ½ tsp


Oil or melted butter – ¼ cup


Vanilla extract – ½ tsp


Chopped walnuts or almonds – 2 tbsp (optional)

๐Ÿฅฃ Instructions:


1. Prep the Dates:


Soak dates in warm milk for 20 minutes. Blend into a smooth paste.




2. Make the Batter:


In a bowl, mix oat flour, whole wheat flour, baking powder, and baking soda.


In another bowl, mix the dates paste, oil, and vanilla extract.


Combine the wet and dry mixtures. Add milk gradually to get a smooth batter (not too runny).




3. Add Nuts (Optional):


Gently fold in chopped nuts for added crunch.




4. Bake:


Preheat oven to 180°C (350°F). Line cupcake tray with liners.


Pour batter ¾ into each cup.


Bake for 15-20 minutes or until a toothpick comes out clean.
