Recipe: Pyaz Aloo Khasta Kachori in Appe Stand
Ingredients:
For Dough:
2 cup wheat flour
1 cup suji
2 tbsp oil or ghee
Salt to taste
Water (as needed)
For Stuffing:
1boiled potatoes (mashed)
3 large onion (finely chopped)
1-2 green chilies (finely chopped)
1 tsp ginger paste
1/2 tsp jeera (cumin)
1/2 tsp turmeric
1/2 tsp garam masala
1/2 tsp amchur or chaat masala
Salt to taste
Fresh coriander leaves
1 tsp oil
Method:
1. Dough Preparation:
Mix aata, suji, salt, and oil. Add water and knead a tight dough. Rest for 15-20 minutes.
2. Prepare Stuffing:
Heat oil in a pan, add and cumin.
Add ginger, green chili, and onion. Sauté until translucent.
Add turmeric, salt, mashed potato, and rest of the spices.
Cook for 2-3 mins. Add coriander and cool it.
3. Assemble Kachori:
Divide dough into small balls.
Flatten each, add stuffing in center, and seal properly.
4. Cook in Appe Stand:
Preheat appe stand and grease it lightly.
Place each stuffed kachori in one cavity.
Cover and cook on low flame for 3-4 minutes each side till golden brown and crisp.
5. Serve Hot with green chutney or tamarind chutney!
